This isn't simply old Dom Pérignon.

Dom Pérignon Plénitude 2 Vintage 2006, commonly known as P2, represents the second life of one of Champagne's most famous wines, released only after an extraordinarily long period of maturation in the Maison's cellars.

Dom Pérignon's philosophy is that a vintage doesn't develop in a straight line. Instead, it reaches distinct moments of expression called Plénitudes. The familiar Vintage release represents its first Plénitude. Selected bottles are deliberately kept ageing on their lees for many additional years until the wine reaches Plénitude 2, a point at which Dom Pérignon believes it has gained greater energy, intensity and complexity.

For the 2006 P2, that journey involved approximately 15–17 years of cellar maturation before release.

The original 2006 vintage came from an unusual growing season. A hot July was followed by a cool, wet August, before warm, dry September weather arrived at exactly the right moment. Harvest began on 11 September and stretched across almost three weeks, producing fruit with exceptional ripeness.

After its extended maturation, P2 2006 emerges considerably more developed than the original release. Floral and mineral notes meet ripe peach, citrus and apricot before moving into darker, more mature territory: toasted hazelnut, cocoa, smoke, spice and roasted notes.

Yet despite all those years in the cellar, the defining feature isn't simply maturity.

It's energy.

The wine retains remarkable tension and freshness, finishing with salinity, chalky minerality and a fine gastronomic bitterness that gives the enormous richness somewhere to go.

Basically, Dom Pérignon took an already expensive bottle of Champagne, hid some of it away for another decade and a half, and somehow made it even more serious.

Tasting Notes

Appearance: Deep, luminous golden yellow with an exceptionally fine and persistent mousse.

Nose: Initially soft and inviting, opening with floral and mineral aromas before revealing vine peach, citron and ripe orchard fruit. With air, deeper notes of mocha, brioche, toasted nuts, spice and subtle smoke begin to emerge.

Palate: Broad, concentrated and beautifully textured. Peach and citrus are joined by dried fruit, toasted hazelnut and cocoa, with smoky and roasted notes adding further depth. Despite its richness, the wine remains remarkably energetic, gradually tightening across the palate as its mineral structure becomes more apparent.

Finish: Exceptionally long and increasingly saline, with toasted hazelnut, dried fruit, cocoa and chalky minerality lingering alongside a fine, elegant bitterness.

Food Pairing

P2 2006 is far more vinous than a straightforward celebratory glass of Champagne and deserves food capable of keeping up.

Think caviar, langoustine, scallops, lobster, turbot, veal, foie gras or rich mushroom dishes. Toasted and roasted flavours work particularly well with the mature hazelnut, cocoa and smoky character of the wine, while citrus and fresh herbs can highlight its underlying freshness.

Or open it without food and spend the next two hours explaining P2 to everyone in the room.

At this level, you've earned the right to become slightly insufferable.

Why It's Worth a Look

The important thing about Dom Pérignon P2 2006 is that it isn't simply a bottle of regular 2006 that somebody left lying around for longer.

The additional ageing happens on the lees, under the control of Dom Pérignon in its own cellars, fundamentally changing the wine before disgorgement. The extended contact develops greater aromatic complexity, texture and depth while preserving the freshness that would be considerably harder to retain through ordinary post-disgorgement bottle ageing.

That makes P2 a fascinating opportunity to experience the same vintage at a completely different stage of its evolution.

And 2006 has evolved beautifully.

The fruit is still there, but now it's surrounded by smoke, toast, nuts, cocoa, spice and minerality. It's richer and more complex than the original release, yet somehow feels charged with freshness rather than tired by age.
