Instead, it reaches distinct moments of expression called Plénitudes. The familiar Vintage release represents its first Plénitude. Selected bottles are deliberately kept ageing on their lees for many additional years until the wine reaches Plénitude 2, a point at which Dom Pérignon believes it has gained greater energy, intensity and complexity.

For the 2006 P2, that journey involved approximately 15–17 years of cellar maturation before release.

The original 2006 vintage came from an unusual growing season. A hot July was followed by a cool, wet August, before warm, dry September weather arrived at exactly the right moment. Harvest began on 11 September and stretched across almost three weeks, producing fruit with exceptional ripeness.

After its extended maturation, P2 2006 emerges considerably more developed than the original release. Floral and mineral notes meet ripe peach, citrus and apricot before moving into darker, more mature territory: toasted hazelnut, cocoa, smoke, spice and roasted notes.

Yet despite all those years in the cellar, the defining feature isn't simply maturity.

It's energy.

The wine retains remarkable tension and freshness, finishing with salinity, chalky minerality and a fine gastronomic bitterness that gives the enormous richness somewhere to go.

Basically, Dom Pérignon took an already expensive bottle of Champagne, hid some of it away for another decade and a half, and somehow made it even more serious.

Tasting Notes

Appearance: Deep, luminous golden yellow with an exceptionally fine and persistent mousse.

Nose: Initially soft and inviting, opening with floral and mineral aromas before revealing vine peach, citron and ripe orchard fruit.
