The vines grow in clay-rich Malmesbury shale soils. \u003cspan class=\"contents\"\u003e\u003cspan class=\"\"\u003e\u003c\/span\u003e\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003eAfter hand-harvesting, the grapes are gently whole-bunch pressed, fermented in well-seasoned barriques and matured for nine months on the lees.
